I have just purchased & installed Adobe Audition 2.0 (Education version). The PC I'm using is a Compaq 1.7GHz  Pentium 4  running Windows XP Pro.

This machine has two Soundcard devices:  Audio Science ASI4312 (with 2 stereo outputs)  and a basic SoundMax on-board card.  Both devices are working correctly.  I've used both with an unregistered version of Cool Edit Pro.

When attempting to select playback soundcards under >Edit> Audio Hardware Setup   Audition only gives the SoundMax as the default output device.    I have a choice of either cards for Default Input but only the SoundMax for Output.

I assume the ASI card is not ASIO capable, I have the latest driver but only the "Audition Windows Sound" is available.

Any suggestions?

Welcome to the forum.

Try using the ASIO4ALL (free) driver. This gets around a lot of problems of this sort, and may well help you.

or did you just mean for the eudio science one... sorry, i find all the soundcard stuff a bit confusing sometimes!

ASIO4ALL provides a driver interface for any card (well, most cards...) that don't have a suitable ASIO driver. There's a reasonably good chance that it will work with both cards, probably simultaneously. It certainly does this on my laptop, with the mobo sound and an external Firewire device, so I don't see why it shouldn't do the same thing with your setup, in principle.
