How do I set the limiter or compressor to only limit sounds above -3 in my recordings? 

I just want those peaks tamed.

not meaning to be facetious but basically by setting cmp/lmt threshold to -3 dB

other parameters of AA dynamic processor will effect the outcome as will the initial dynamics of content on which you're working

the quicker the attack time, more or less, the more transients will be impacted (an attack time of 100 ms on a snare hit will have less obvious impact then on an organ swell . . . even though both transients might reach max amplitude almost instantaneously)

anyway a place to start is with hard limit -3 preset and see what happens . . . then mess with all the parameters and see what happens
