Hello Broadway. Well, as far as which mics are the best and which you should use...there's no answer here, honestly. Just listen to them (modeled through your sm58)and see what you like and what suits your music. AKGC414s are great mics, but I wouldn't use it for RAP. Neumann U87 is a great mic, but I wouldn't use it for -everything-...just experiment.
As far as cardiod, figure 8, these are all directionality pickup patterns. Hyper-cardiod is a rather narrow pickup pattern, which means that most of the allotted signal into the mic is coming from directly in front of the diaphragm, with very little pickup to the sides and rear. Cardiod is a bit wider, and commonly used for vocals. Figure 8 allows the pickup to be front & rear (back to back) so you could have two singers in front of each other, doing BGVs. And OMNI picks up from all directions. Great for room micing applications.

This is purely an opinion about mic modelling...
One of the things that you might find with the mic modeller (although I haven't tried it myself)is that if it lets you select directional patterns, it might also change the frequency responses considerably - cardioid mics tend to accentuate the bass when you get close to them, for instance. Trouble is, the mic modeller cannot possibly know how close someone was to a mic! So if it seems to boost the bass in any of the cardioid positions, then it's not modelling, it's guessing...
But if it sounds good in your mix, then use it!
