Does Audition 3 offer some sort of log file with each edit, say if I edit some music and want a log file kept to show what edits were done to that music, does Audition do this automatically some how?

Not in Edit view. However Multitrack view being non-destructive saves all the edits and effects settings etc. in the Session .ses file. This can also be saved now out as an .xml file that could be read by other software.
