Hey Musicman. Well, any school is really only as good as it's faculty. That being said, good 'audio engineering' schools can be based on not only teaching you how to record NOW (with modern equipment, techniques), but more importantly how it WAS done (the real down and dirty).
Though I don't know of any specific schools in the SoCal area, I know that UCBerkley has a decent department. On the other side of the US, Berklee College of Music (Boston, MA) is probably the best around and caters to students from all over the world (great for recording and general music experience, knowledge, etc).
There are others like Full Sail (in Fla.) that are strictly 'Recording' only institutes - but you're not going to have as well-rounded of an experience there.
Conservatory of Recording Arts and Sciences (Tempe, AZ) is another. Rather well regarded, and they've been in print.
I'd probaby call a couple of those places and seek out some literature. Decide what you're really looking for, and then seek out your match.
