The smooth vocal preset worked great for the vocals, but I can't seem to find a good dynamic processing preset for an acoustic guitar. Anybody know one?

All guitars and recordings of them are different; ergo there is no such preset.

How about if I just want to smooth out the loudest notes, and make them a little softer?

It's a matter of understanding and knowing how to use dynamic processing.  How you approach it depends on the type of music, the performance, the guitar, and numerous aspects of the recording setup.

It's a bit like asking "How do I make Salad Dressing?"

Well, it depends on the salad, who's eating it, what you're eating it with, what ingredients you might have on hand ... ... you get the idea.
